Strawberry Greek Yogurt Muffins
We have been in a bit of a breakfast funk lately.  Frozen blueberry waffles or dry cereal has been our quick breakfast of choice.  The kids were tired of the same old breakfast and went on strike.  This weekend I put the decision in their hands and my oldest decided strawberry muffins would be delicious.

These were super simple to make.  I’m sure they would taste delicious with any fruit mixed in.  This was our first time using silicone baking liners, and I LOVE them.  I hate when the paper liners steal half the muffin.  Our delicious strawberry greek yogurt muffins slipped right out of the reusable silicone liners, perfection!

Ingredients
  

  • 1 ½ c. whole wheat flour
  • ½ c. oats or Scottish oatmeal
  • ½ c. sugar
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • ½ tsp. cinnamon
  • 2 c. plain greek yogurt
  • 1 egg
  • 3 tbsp. melted coconut oil
  • 1 tsp. vanilla
  • 1 c. diced fresh strawberries

Instructions
 

  • Preheat oven to 375°. Prep muffin pan with liners or cooking spray.
  • Whisk together dry ingredients (flour, oats, sugar, baking powder, baking soda, salt, and cinnamon) in a large bowl.
  • In a medium bowl, whisk together yogurt, egg, coconut oil and vanilla.
  • Slowly incorporate the wet ingredients into the dry ingredients and stir until just combined being careful not to over-mix.
  • Gently fold in fresh strawberries to the batter. Using an ice-cream scoop, divide batter evenly among muffin tins.
  • Bake 20-25 minutes or until a toothpick comes out clean.

    Just made these 🙂 I only had frozen strawberries and white flour so used that instead, and I also reduced the sugar down to half and used 1/4 cup of coconut sugar instead. The house smells great, and they taste amazing! Will definitely use fresh fruit next time though.

    Do you use old fashioned oats or quick oats?

      I used Scottish oatmeal for this recipe, but normally use quick oats. I think regular oats would be too firm after baking.

    So yummy! I made these while camping to use up a big batch of strawberries. I didn’t have whole wheat flour so used white and they turned out very tasty. Thanks for sharing 🙂

    How much protein is in this recipe? And what calorie count is this based off of? This sounds delicious but my boyfriend is on a low carb, low calorie diet and low sugar.

      About 122 calories and 5g of protein. Only about 16g of carbs when prepared as listed.
