No Bake Energy Bites
My mother-in-law made the most amazing healthy no bake energy bites last week.  We had a couple over ripe bananas on their way to becoming some sort of baked good.  Since I was making up my strawberry greek yogurt muffins she decided to try something new out.  

No Bake Energy Bites
These energy bites are tasty and packed with fiber and protein.  They have been a hit with everyone in the house.  Because no baking is involved the recipe is pretty flexible.  Switch out raisins for chocolate chips or almond butter for another favorite nut butter.  You could even add a little vanilla and cocoa powder to make a little sweet evening treat.  The kids love helping out with the rolling of the energy bites.

No bake breakfast balls packed with fiber and protein.

Ingredients
  

  • 2 ripe bananas
  • 1/3 c. almond butter
  • 2 tbsp. coconut flakes
  • 2 tbsp. raisins
  • 2 tbsp. ground flaxseed apple, cinnamon, & peach
  • 3/4 c. oats
  • 1 c. granola

Instructions
 

  • Mash bananas. Mix in remaining ingredients.
  • Coat hands in coconut oil. Roll into 1 in. balls and place on wax paper.
  • Place in freezer until firm. Store in refrigerator.
