We had a dilemma the other night in our house. My mother-in-law loves my Sunday cookies, but her doctor has taken her off caffeine and a put her on a low sodium diet. I was whipping up a batch for everyone else and we decided we needed to come up with a new recipe, something she could enjoy. What resulted is a chocolate free, low sodium no bake cookie.
Ingredients:
1/4 c. unsalted butter
1/4 c. milk
1 c. sugar
1/4 c. almond butter
1/4 tsp. vanilla extract
1 1/2-2 c. oats
1/2 c. raisins
Directions:
-Mix the first 3 ingredients in a large saucepan.
-Continuously stir, bringing it to a rolling boiling for 1 minute.
-Remove from heat, add vanilla and almond butter.
-Add first 1 1/2 c. quick oats.
-Stir in raisins. Add additional oats to reach a consistency where a spoon will stand up straight.
-Drop cookies on cooling rack lined with wax paper.
-Wait for them to dry and ENJOY!
variations:
omit raisins and add 2 tbsp. cocoa powder.
cut raisins in half and add 1/4 c. coconut.
