There is one snack that doesn’t last long in our house, no bake energy bites.  Combine those with my kids favorite apple pie LARA bars and you have a very successful recipe.  These energy bites are very similar to my other popular recipe, but use dates instead of bananas for the base.

The oats add a little bite to a very gooey energy ball.  I like the addition of the oats to our LARA balls as an added source of fiber.  It’s the perfect filling snack for my boys.  We even like to pair them with a little greek yogurt in the morning.

Date No Bake Energy Bites

Ingredients
  

  • 12 dates pitted
  • 3-4 tbsp. applesauce
  • 12 almonds
  • 1 tsp. cinnamon
  • 1/2 c. oats
  • 1/4 c. raisins
  • 1/4 c. unsweetened coconut
  • 1 tbsp. almond butter

Instructions
 

  • Place the dates and applesauce in a food processor, blend until smooth.
  • Add almonds and cinnamon, mix.
  • Transfer mixture to a medium bowl. Add remaining ingredients and mix.
  • Using a scoop or spoon roll mixture into 1" balls.
  • Place on parchment paper in the fridge until firm.
  • Serve straight from the fridge.
