Oat Bran Muffins with Applesauce

Oat Bran Muffins
When I was younger I loved oat bran muffins.  My mom would buy a huge box of mix that would last for several months.  It was the perfect hearty breakfast.  Paired with some yogurt and a bowl of fruit, YUM!  Unfortunately they stopped marketing my favorite muffins in my region so I’ve been on the hunt for my very own recipe for awhile.

This is my first attempt and they get pretty close.  A little toasted oat flavor with a hint of vanilla and cinnamon.  The applesauce makes the muffins super moist without the use of oil.  Yay for a great substitution that doesn’t skimp on flavor or texture.

Oat Bran Muffins with Applesauce

Ingredients
  

  • 1 c. oat bran
  • 1 c. flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/4 c. brown sugar
  • 1/2 tsp. cinnamon
  • 2 tbsp. water
  • 1 c. Applesauce
  • 1 egg

Instructions
 

  • Preheat oven to 400°.
  • Mix together oat bran, flour, baking soda, baking powder, cinnamon, and brown sugar in a medium bowl.
  • Add water, applesauce, and egg. Stir until incorporated and most lumps are gone.
  • Add a scoop of batter to each lined muffin cup.
  • Bake 12-15 min or until a toothpick inserted comes out clean.
  • Serve warm or cool and store in an airtight container.
