I learned a few things about myself and breakfast a long time ago. First cereal is for dinner only. It’s the perfect last minute, late dinner, but as a foundation meal for the day never fills me up. Next, if it isn’t quick and easy it ain’t happening. Big breakfasts are reserved for Sundays and usually in the fall when I cook up a huge batch of pumpkin pancakes. Then we have breakfast for the whole week. Last, I can’t drink my breakfast. Smoothies are the perfect way to get in veggies and fruits, but I have to have something to chew on if I’m going to feel satisfied. That’s where eggs come in. A casserole or single service egg dish reheats nicely. Which means I cook once on Sunday and eat the rest of the week.
