Lemon Herbed Mashed Potatoes

Herbed, salt-free mashed potatoes with a tangy kick.

Ingredients
  

  • 2 pounds Yukon gold potatoes
  • 1/2 c. milk
  • 1/4 c. sour cream
  • 3 tablespoons unsalted butter
  • 1 1/4 tsp. lemon juice 1 tsp. for cooking
  • 1/4 tsp. freshly ground black pepper
  • 1 tbsp. chopped fresh chives

Instructions
 

  • Place peeled potatoes in saucepan covered with water and 1 tsp lemon. Bring water to a boil, cover, and simmer until tender.
  • Drain.
  • Push potatoes through a potato ricer or food mill into pan.
  • Add milk and remaining ingredients minus chives. Mix until butter is melted and everything incorporated.
  • Top with chopped fresh chives.

Notes

Lemon juice is a nice salt substitute. Replace 1/2 the salt with fresh squeezed lemon juice.
