Lemon Herbed Mashed Potatoes

Herbed, salt-free mashed potatoes with a tangy kick.

Yukon gold potatoes
1/2
c.
milk
1/4
c.
sour cream

tablespoons
unsalted butter
1 1/4
tsp.
lemon juice
1 tsp. for cooking
1/4
tsp.
freshly ground black pepper
1
tbsp.
chopped fresh chives
Instructions
Place peeled potatoes in saucepan covered with water and 1 tsp lemon. Bring water to a boil, cover, and simmer until tender.
Drain.
Push potatoes through a potato ricer or food mill into pan.
Add milk and remaining ingredients minus chives. Mix until butter is melted and everything incorporated.
Top with chopped fresh chives.
Notes
Lemon juice is a nice salt substitute. Replace 1/2 the salt with fresh squeezed lemon juice.
