Monster Mint Frankenstein Cupcakes

these Frankenstein cupcakes are monsteously good and so simple to theough together!

Every morning my oldest pops out of bed and gives us the daily countdown.  I know that today is officially 2 days until Halloween.  Excited, much?  It is no surprise really that both boys LOVE fall.  The house is spooky from inside to out, Halloween costume discussion begins back in summer, and Halloween treats are not scarce.

When I picked up cupcakes for my youngest’s birthday they had these yummy mint chocolate chip cupcakes.  I jazzed each cupcake up a bit for his birthday celebration and held one aside to create a monster mint Frankenstein cupcake.  The green color just screamed Frankenstein to me.

Supplies:
green chocolate frosted cupcakes
black sugar or chocolate sprinkles
Tootsie Roll Midgees
toothpicks
red writing gel
candy eyes

Directions:

Bake your cupcakes and prep frosting.  I used store bought cupcakes.  Add peppermint extract and mini chocolate chips for monstrous mint flavor.

Spread frosting into a cylinder.  Make sure the top is nice and flat.

Add 2 candy eyes to the front of the frosting.

Add sprinkles or colored sugar to a shallow bowl.  Roll the top of the cupcake in the sprinkles.

Break one midgee and one toothpick in half.  Place one end of each toothpick through a piece of Tootsie Roll.

Push the end of each Tootsie Roll toothpick into the top side of the cupcake.

Add a stitch to one side of Frankenstein’s “cheek” with red writing gel.
