My husband likes to go on his own culinary adventures from time to time.  The other night he happened to hit the jackpot and create something that was totally on spot.  I walked in from the gym to the delicious aroma of herbed cheese fries baking in the oven.  After giving him the thumbs up, knowing me so well, he said well aren’t you going to take a picture.  He let me snap a few pictures of his masterpiece before devouring them during Monday Night Raw, sorry JD I just outed your guilty pleasure.

These fries are 100% baked in the oven, no frying involved.  Just a cold bath and a little olive oil.  The cold bath is what gives the french fries the bubbly crispy outside, removing any starch on the outside of the potatoes.

Herbed Cheese Fries

Ingredients
  

  • baking potatoes
  • salt
  • cumin
  • red pepper
  • chives
  • cilantro
  • cheddar cheese
  • gruyere cheese.

Instructions
 

  • Preheat oven to 450ª.
  • Slice your potatoes into strips. If you are leaving the skins on make sure to give them a good scrub before slicing.
  • Soak your potatoes for a couple minutes in an ice bath. Drain the water, and pat your potatoes dry.
  • Toss your potatoes in olive oil. Sprinkle and toss with salt, cumin, and red pepper before transferring to a lined baking sheet.
  • Bake the potatoes until golden, approximately 20 minutes each side.
  • Remove from the oven and top with cheese, chives, and cilantro. Return to the oven until the cheese is just melted.
  • Serve with ranch.
