This recipe is quick, delicious, and makes a fantastic summer snack or meal. I don’t know why I never thought of using canned/prepped tomatoes before. Cut my prep time down to just a few minutes.
1 lg. can (28 oz.) diced tomatoes
1/2 c. pre-chopped onions
2 medium jalapeños (partially seeded and membrane removed)
2 tsp. salt
1/2 tsp. sugar
1 tbsp. lime juice
1 clove garlic
med. bunch cilantro
Directions:
Put all the ingredients in your food processor or blender.
Pulse and blend to desired consistency, about 30 seconds.
Taste and adjust seasoning to taste.
Serve with a nice and refreshing Strawberry Daquari, Margarita, or slushy.
Tip:
More seeds equals more spice. I used about 1/2 the seeds and I would classify my salsa as medium. Use more or less depending on your taste.
