Every Fall we buy the most delicious pancake mix from Trader Joe’s. It’s pumpkin, and every Sunday we cook up enough to last us the whole week. It’s so delicious! Dad likes it with agave syrup, Aiden plain, and I like to top mine with Cool Whip.
I’m on a mission this year though to replace all pre-packaged and store bought foods. I’m more a french toast girl so this recipe was right up my alley. Luckily I had a jar of pumpkin puree sitting around in the pantry.
Ingredients
- 2 eggs
- 1/4 cup milk
- 1/4 cup pumpkin puree
- 1/4 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ginger
- 1/8 teaspoon cloves
- 8 slices of bread (we used slightly stale Texas Toast)
Preheat griddle
Mix all ingredients together
Soak each piece of toast in the batter
Cook on griddle until both sides are golden brown
Slice up and top with a bit of powdered sugar
